The four enemies of fresh coffee
Fresh coffee is one of the most sensitive foods to storage conditions. Four factors degrade it quickly: UV light breaks down aromatic compounds; heat accelerates oxidation; humidity encourages mould and rancidity; oxygen is the main deterioration agent.
The right container
The best option is an opaque hermetic container, preferably ceramic or stainless steel, without rubber seals that add foreign odours. The original bag is fine if it has an aroma valve and hermetic seal. Avoid transparent glass containers even if they are airtight.
